Ingredients

Scale
  • 1 head cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup cold water
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (optional)
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Mix the flour, cornstarch, salt, garlic powder, and paprika in a bowl. Gradually add cold water, mixing until a smooth batter forms.
  3. Coat each cauliflower floret in the batter, then roll in panko breadcrumbs, pressing gently.
  4. Bake for 25-30 minutes until golden and crispy, flipping halfway through.
  5. Prepare the sauce by mixing mayonnaise, sweet chili sauce, and sriracha in a bowl until smooth.
  6. Toss the baked cauliflower in the sauce until well coated.
  7. Garnish with chopped green onions and sesame seeds, and serve hot.

Notes

For an extra crunch, double-dip the cauliflower before baking. Customize with spices and serve alongside a light salad or rice.
