A delightful and simple Banana Cream Pie with layers of ripe bananas and creamy custard, topped with whipped cream.

  • 4 ripe bananas
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 large egg yolks
  • 1 tablespoon vanilla extract
  • Whipped cream (for topping)
  • Additional banana slices (for garnish)

Instructions

  1. Place the pie crust in a pie dish and bake according to package instructions. Let it cool completely.
  2. In a saucepan, whisk together the granulated sugar, cornstarch, and salt. Gradually whisk in the milk, cooking over medium heat. Stir constantly until the mixture thickens and comes to a gentle boil.
  3. In a bowl, lightly beat the egg yolks. Gradually whisk in some of the hot custard mixture to temper the yolks, allowing them to warm without scrambling. Return the entire mixture to the saucepan and cook for an additional 2 minutes.
  4. Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool slightly so it thickens further.
  5. Slice the ripe bananas and arrange them in a single layer at the bottom of the cooled pie crust. Pour the luscious custard mixture over the bananas, ensuring an even distribution.
  6. Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set.
  7. Before serving, whip the heavy cream until soft peaks form and spread it generously over the pie. Garnish with additional banana slices for that classic touch.

Notes

For best results, add whipped cream fresh before serving to maintain texture. Use chilled equipment for whipping cream.
