A nostalgic and creamy dessert that combines luscious bananas with velvety custard and fluffy whipped cream, all encased in a buttery pie crust.

Ingredients

Scale
  • 1 pie crust (store-bought or homemade)
  • 3 ripe bananas
  • 1 cup of milk
  • 1 cup of heavy cream
  • 3/4 cup of granulated sugar
  • 1/4 cup of cornstarch
  • 1/4 teaspoon of salt
  • 4 large egg yolks
  • 1 teaspoon of vanilla extract
  • Whipped cream for topping

Instructions

  1. Preheat the oven and bake the pie crust according to the package instructions. Let it cool completely.
  2. In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until thickened and bubbling.
  3. Whisk the egg yolks in a separate bowl. Temper the yolks by adding a small amount of the hot custard mixture while whisking. Return to the pan and cook for another 2 minutes.
  4. Remove from heat and stir in the vanilla extract.
  5. Slice the bananas and layer them in the cooled pie crust. Pour the custard filling over the bananas.
  6. Cover with plastic wrap and chill in the refrigerator for at least 4 hours.
  7. Top with whipped cream before serving.

Notes

Ensure bananas are perfectly ripe for optimal sweetness. Continual stirring during custard preparation is key.
