Deliciously creamy Banana Cheesecake Bars with a buttery graham cracker crust, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ripe banana, mashed
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9×9 inch baking pan.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter, then press into the bottom of the prepared pan.
  3. Beat the softened cream cheese with 1 cup sugar until smooth and creamy.
  4. Add the vanilla extract, eggs, and mashed banana, mixing until well combined.
  5. Stir in the sour cream until the mixture is smooth.
  6. Pour the cheesecake mixture over the crust, spreading evenly.
  7. Bake for 30-35 minutes, or until the center is set and slightly firm.
  8. Chill in the pan, refrigerate for at least 4 hours before slicing.

Notes

For a thicker crust, increase graham cracker crumbs by 1/2 cup. Ensure cream cheese is at room temperature for a smooth filling.
