Delightful banana cheesecake bars with a creamy filling and a buttery graham cracker crust topped with caramel.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 1/2 cup caramel sauce
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl until well combined. Press this mixture firmly into the bottom of a 9×13 inch pan to form a solid crust.
  3. Beat together the softened cream cheese, 1 cup sugar, and vanilla extract until smooth and fluffy.
  4. Add eggs to the cheese mixture one at a time, mixing well after each addition.
  5. Gently stir in the mashed bananas and pour this filling over your prepared crust.
  6. Place the pan in the oven and bake for 45-50 minutes or until the center is set but still slightly jiggly. Cool completely at room temperature.
  7. Whip the heavy cream to soft peaks in a separate bowl.
  8. Fold the caramel sauce into the whipped cream.
  9. Spread the caramel whipped cream over the cooled banana cheesecake layer.
  10. Sprinkle chopped nuts on top for an added crunch (if desired).
  11. Place in the refrigerator and chill for at least 4 hours.
  12. Slice into squares and serve.

Notes

Ensure your cream cheese is softened to room temperature for easy mixing. These bars are perfect for summer gatherings.
