A wonderfully moist and fluffy Banana Cake packed with the natural sweetness of ripe bananas, perfect for novice bakers.

Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time and stir in the mashed bananas and vanilla extract.
  4. Mix together the flour, baking soda, and salt, then gradually add to the banana mixture, alternating with the sour cream.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

Serve this cake on its own or with a glaze, powdered sugar, or whipped cream. It can also be frozen for up to 3 months.
