A comforting dish of creamy feta cheese and perfectly baked eggs surrounded by roasted cherry tomatoes, perfect for brunch.

Ingredients

  • 200g Feta cheese
  • 4 Eggs
  • 2 tbsp Olive oil
  • 250g Cherry tomatoes
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (e.g., dill or parsley), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place a block of feta cheese in the center of a baking dish, surrounded by cherry tomatoes.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Bake for about 20 minutes, until the feta is soft and tomatoes are bursting.
  5. Remove from the oven and crack eggs around the feta and tomatoes.
  6. Return to the oven and bake until eggs are set to your liking, about 8-10 minutes.
  7. Garnish with fresh herbs before serving.
