These crispy avocado egg rolls are filled with a creamy mixture of ripe avocados, sun-dried tomatoes, and cilantro, making for a delicious and satisfying appetizer.

Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Egg roll wrappers
  • Oil for frying

Instructions

  1. Mash the avocados until creamy. Add in the chopped sun-dried tomatoes, finely chopped red onion, and fresh cilantro. Squeeze lime juice over the mixture. Sprinkle garlic powder, salt, and pepper, and mix everything together.
  2. Lay an egg roll wrapper on a flat surface, with one corner facing you.
  3. Place a few tablespoons of the avocado mixture in the center of the wrapper.
  4. Fold in the sides of the wrapper and roll tightly away from you to seal.
  5. Heat the oil over medium heat until hot enough for frying.
  6. Carefully place the egg rolls in the hot oil, frying them for about 2-3 minutes on each side until golden brown.
  7. Remove from oil and let drain on paper towels. Serve warm.

Notes

These egg rolls can be served with a dipping sauce such as sweet chili sauce or fresh lime vinaigrette.
