Delightful baked apple pie cups filled with spiced apple filling, perfect for sharing or a solo treat.

  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups apple pie filling
  • Additional cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugar, baking powder, ground cinnamon, and salt until well combined.
  3. Add the softened butter, egg, and vanilla extract into the dry mixture. Mix until a soft, cohesive dough forms.
  4. On a lightly floured surface, roll out the dough, making it thin enough to fit into a muffin tin.
  5. Using a round cutter or a glass, cut the dough into circles that are slightly larger than the muffin tin cups.
  6. Carefully press the dough circles into each cup of the muffin tin, creating a little crust that will hold in the apple filling.
  7. Spoon the apple pie filling generously into each dough-lined muffin cup.
  8. Sprinkle a little cinnamon sugar on top of each filled cup for that extra touch of sweetness and spice.
  9. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the filling is bubbling slightly.
