  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 cups peeled, chopped apples

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line a muffin tin with paper liners.
  3. Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a large bowl.
  4. Whisk together melted butter, milk, and eggs in another bowl.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Fold in the chopped apples.
  7. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool for a few minutes before transferring to a wire rack.

Notes

For best flavor, use tart apples like Granny Smith. Don’t overmix the batter to avoid dense muffins.
