Deliciously fluffy muffins filled with caramelized apples and warm cinnamon, perfect for breakfast or a cozy snack.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Combine the melted butter, milk, eggs, and vanilla in another bowl.
  4. Pour the wet ingredients into the dry ingredient mixture and stir until just combined.
  5. Fold in the diced apples until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For best flavor, use a mix of tart and sweet apples. Store in an airtight container for up to 3 days.
