Delicious and nostalgic apple cinnamon muffins filled with tender apple chunks, perfect for cozy mornings.

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups peeled and diced apples
  • Additional cinnamon sugar for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Combine the melted butter, milk, egg, and vanilla extract until fully mixed.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the diced apples gently.
  6. Fill the muffin cups about 2/3 full with the batter and sprinkle with cinnamon sugar if desired.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

These muffins can be stored in an airtight container at room temperature for up to three days or frozen for up to three months.
