Deliciously soft and chewy cookies bursting with apple bits and topped with a sweet apple cider glaze, perfect for fall.

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar for glaze
  • 1–2 tbsp apple cider for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the large egg, vanilla extract, and apple cider, mixing until smooth.
  4. Whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  5. Combine the dry mixture with the wet ingredients, stirring until just combined.
  6. Fold in the diced apples gently with a spatula.
  7. Scoop dollops of dough onto the lined baking sheet and bake for 10-12 minutes.
  8. Cool on the sheet for a few minutes before transferring to a wire rack. Drizzle with a glaze made from powdered sugar and apple cider.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze unbaked dough for up to 3 months.
