A light and airy angel food cake that’s perfect for any occasion, with a subtle flavor of vanilla and an optional hint of almond.

Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 1 1/4 cups egg whites (about 810 large eggs)
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sift together the cake flour and 3/4 cup of the granulated sugar, and set aside.
  3. Beat the egg whites with cream of tartar and salt until soft peaks form.
  4. Gradually add in the remaining sugar, continuing to beat until stiff peaks form.
  5. Fold in the vanilla and almond extracts.
  6. Carefully fold the flour mixture into the egg whites.
  7. Pour the batter into an ungreased angel food cake pan.
  8. Bake for 30-40 minutes, or until golden and springs back when touched.
  9. Invert the pan to cool the cake completely.
  10. Run a knife around the edges to remove the cake from the pan.

Notes

Serve with fresh berries or whipped cream for added flavor.
