A light, meringue-like frosting that transforms any cake or dessert into a sweet masterpiece.

  • 2 large egg whites, at room temperature
  • 1 ½ cups granulated sugar
  • ¼ cup water
  • Pinch of salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare Double Boiler: Fill a saucepan with about 1 inch of water and bring it to a gentle simmer over medium heat. Choose a heatproof metal or glass mixing bowl that fits snugly over the saucepan without touching the water.
  2. Combine Ingredients: In the mixing bowl, combine the egg whites, sugar, water, and salt. Place the bowl over the simmering water, ensuring the bottom does not touch the water.
  3. Whip Frosting: Using a hand mixer on high speed, beat the mixture continuously for about 7 minutes until it thickens into a glossy, fluffy texture.
  4. Check Peaks: By the 6-minute mark, check for stiff peaks. Remove from heat once the frosting is thick and shiny.
  5. Add Vanilla: Stir in the vanilla extract and beat for an additional minute to stabilize the texture.
  6. Use Immediately: Spread or pipe the frosting onto your cake or cupcakes right away, as it sets quickly once applied.

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to a day. Re-whip lightly before using if needed.
