A luscious, fluffy strawberry ganache filling that adds a delightful surprise to cakes and cupcakes, perfectly balancing creamy chocolate with vibrant fruit.

Ingredients

  • 1 cup dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup strawberry puree
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Heat the cream in a small saucepan over medium heat until it just begins to simmer.
  2. Pour the hot cream over the chopped dark chocolate in a mixing bowl and let it sit for 2-3 minutes.
  3. Stir the mixture gently until it’s smooth and glossy.
  4. Mix in the strawberry purée until fully combined and a delightful pink hue emerges.
  5. Cover the bowl with plastic wrap and chill the ganache in the refrigerator for 1-2 hours.
  6. Whip the chilled ganache with a hand mixer until light and fluffy.
  7. Add optional powdered sugar and whip again until combined.
  8. Use the ganache as a filling for cakes, cupcakes, or as a light frosting.

Notes

For added sweetness, include powdered sugar. Store leftovers in an airtight container in the fridge for 3-5 days.
