Indulge in rich layers of dark, milk, and white chocolate in these exquisite mousse domes.

Ingredients

  • 4 ounces dark chocolate, chopped
  • 4 ounces milk chocolate, chopped
  • 4 ounces white chocolate, chopped
  • 1 cup heavy cream, divided
  • 3 large eggs, separated
  • 1/4 cup sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon gelatin (optional, for stability)
  • Crisp base or soft sponge for serving

Instructions

  1. Melt the Dark Chocolate: Melt the dark chocolate in a heatproof bowl over simmering water. Allow it to cool slightly before using it in the mousse.
  2. Whip the Cream: In a separate bowl, whip 1/3 cup of heavy cream to soft peaks. Then gently fold in the cooled dark chocolate, ensuring it’s well combined.
  3. Whisk the Egg Yolks: In another bowl, whisk the egg yolks with sugar until pale and creamy. Stir in the dark chocolate mixture until everything is beautifully blended.
  4. Beat the Egg Whites: In a clean bowl, beat the egg whites to soft peaks. Carefully fold them into the chocolate mixture, being gentle to maintain that airy texture.
  5. Repeat for Milk Chocolate: Repeat the above steps for the milk chocolate layer, melting, whipping, and folding in just like you did for the dark chocolate.
  6. Repeat for White Chocolate: Once the milk chocolate layer is complete, move on to the white chocolate in the same manner—melt, whip, and fold.
  7. Chill the Layers: For each layer, allow the mousse to set in the fridge for about an hour. This will ensure that each layer holds its shape when you assemble them.
  8. Final Assembly: Once set, carefully pour the next layer on top of the previous one and chill until everything is fully set.
  9. Serve Your Domes: Carefully remove the mousse from the mold and serve them elegantly on a crisp base or soft sponge.

Notes

Serve with fresh berries or a drizzle of chocolate or caramel sauce for added delight.
