Delightfully chewy cookies made with oat flour and peanut butter, naturally sweetened for a healthier treat.

  • 1 cup oat flour
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut sugar or brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the oat flour, baking soda, and salt.
  3. Combine the peanut butter, honey (or maple syrup), coconut sugar, and vanilla extract until smooth.
  4. Mix the dry ingredients into the wet ingredients until well combined.
  5. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  6. Flatten each ball slightly with a fork.
  7. Bake for 10-12 minutes, or until the edges are golden.
  8. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.

Notes
