Delicious and nutritious cookies that combine peanut butter and chickpeas for a healthy twist on a classic favorite.

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 cup peanut butter
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the chickpeas, peanut butter, brown sugar, maple syrup, vanilla extract, baking soda, and salt in a food processor until smooth.
  3. Add chocolate chips if desired and stir until combined.
  4. Scoop tablespoon-sized amounts of dough onto a lined baking sheet.
  5. Bake for 10-12 minutes or until slightly golden.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to a week or freeze for up to three months.
