Delightfully chewy mango mochi filled with sweet, juicy mango—perfect for any occasion.

Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 ripe mango, diced
  • Cornstarch or potato starch for dusting

Instructions

  1. Combine the dry ingredients in a microwave-safe bowl—mix the sweet rice flour and sugar until well combined.
  2. Add the water gradually to the dry ingredients and stir until smooth and free of lumps.
  3. Cover the bowl with plastic wrap and microwave for 1 minute.
  4. Stir the mixture to ensure even cooking, then microwave for another minute.
  5. Stir again, then microwave for an additional 30 seconds until thick and translucent.
  6. Transfer the mochi dough to a dusted surface and let cool slightly.
  7. Divide the cooled dough into small pieces and flatten into small round discs.
  8. Place a piece of diced mango in the center and fold the edges over to enclose the fruit.
  9. Dust the finished mochi with cornstarch or potato starch to prevent sticking.
  10. Serve chilled or at room temperature.

Notes

Best enjoyed fresh. Store in an airtight container for up to 3 days in the refrigerator.
