A delightful fusion of Japanese tradition and tropical bliss, Mango Mochi is a chewy rice cake filled with sweet mango goodness, perfect for summer gatherings.

Ingredients

  • 1 cup glutinous rice flour
  • 1/2 cup water
  • 1/2 cup mango puree
  • 1/4 cup sugar
  • Cornstarch (for dusting)
  • Mango chunks (for filling)

Instructions

  1. Mix the glutinous rice flour, sugar, and water in a bowl until smooth.
  2. Add the mango puree and mix until well combined.
  3. Pour the mixture into a heatproof dish and steam for about 20 minutes until firm.
  4. Let it cool, then dust a clean surface with cornstarch.
  5. Cut the mochi into squares and place a mango chunk in the center of each.
  6. Fold the mochi over the filling and seal by pinching the edges.
  7. Dust with more cornstarch and serve.

Notes

For best results, ensure ample cornstarch for dusting and steam thoroughly for a chewy texture. Experiment with other fruit purees as fillings.
