A refreshing and zesty pudding that’s perfect for breakfast or a snack, made with simple ingredients.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons maple syrup (or honey)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract
  • Fresh fruit for topping (optional)

Instructions

  1. Combine the chia seeds, almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract in a mixing bowl. Stir well to combine.
  2. Let the mixture sit for 5-10 minutes, then stir again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight until it thickens.
  4. Stir again and serve chilled, topped with fresh fruit if desired.

Notes

Store any leftover pudding in an airtight container in the refrigerator for up to 5 days. May require stirring before serving.
