A delicious and nourishing twist on classic banana bread, made with almond flour and perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth.
  3. Add the eggs, honey or maple syrup, and vanilla extract to the bananas; mix well.
  4. Combine almond flour, baking soda, salt, and cinnamon in another bowl.
  5. Mix the dry ingredients into the banana mixture until fully combined.
  6. Fold in chopped nuts, if desired.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
