Instructions

  1. Prepare the base by combining puffed quinoa and a pinch of salt in a mixing bowl.
  2. Melt the dark chocolate chips in a microwave-safe bowl in short bursts until smooth.
  3. Stir in nut butter, honey (or maple syrup), and vanilla extract into the melted chocolate until creamy.
  4. Pour the chocolate mixture over the puffed quinoa and stir until coated.
  5. Form small balls of the mixture and place on a baking sheet lined with parchment paper.
  6. Refrigerate for about 30 minutes or until firm.
  7. Store in an airtight container in the fridge for up to a week.
