  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup sweetened condensed milk
  • 1 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until combined.
  4. Whisk together the flour, shredded coconut, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet, stirring until just combined.
  6. Transfer the batter into the prepared pan, pressing it down evenly.
  7. Pour the sweetened condensed milk over the top and spread evenly.
  8. Bake for 25-30 minutes or until the top is golden brown.
  9. Allow to cool before cutting into squares.

Notes

Store leftovers in an airtight container for up to 3 days or in the fridge for up to a week. They can also be frozen for 3 months.
