Delicious and fun carrot cake pops coated in chocolate, perfect for any occasion.

Ingredients

  • 2 cups carrot cake, crumbled
  • 1/2 cup cream cheese frosting
  • Chocolate or white chocolate for dipping
  • Cake pop sticks
  • Sprinkles (optional)

Instructions

  1. Combine the crumbled carrot cake with cream cheese frosting until fully combined.
  2. Roll the mixture into small balls, roughly an inch in diameter, and place them on a baking sheet.
  3. Insert cake pop sticks into each ball, making sure they are secure.
  4. Freeze the pops for about 30 minutes to help them set.
  5. Melt the chocolate in a microwave-safe bowl or a double boiler until smooth and silky.
  6. Dip each carrot cake pop in the melted chocolate, tapping the stick gently to let the excess drip off.
  7. Decorate with sprinkles while the chocolate is still wet if desired.
  8. Set the chocolate completely before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
