Bavarian cream is a silky, rich dessert that is perfect for any occasion, easily customizable with toppings and flavors.

Ingredients

  • 2 cups heavy cream
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • 1 tablespoon gelatin
  • 2 tablespoons cold water

Instructions

  1. Heat the milk, sugar, and vanilla over medium heat until just simmering.
  2. Whisk together the egg yolks until pale.
  3. Pour the hot milk mixture into the egg yolks while whisking vigorously.
  4. Return the combined mixture to the saucepan and stir continuously until thickened.
  5. Remove from heat and sprinkle the gelatin over the cold water; let bloom.
  6. Stir the bloomed gelatin into the warm cream mixture until fully dissolved.
  7. Cool the mixture to room temperature.
  8. Whip the heavy cream until soft peaks form.
  9. Fold the whipped cream into the cooled cream mixture.
  10. Pour the mixture into molds.
  11. Refrigerate until fully set, about 4 hours.

Notes

Serve with fresh berries or chocolate sauce, and store in the refrigerator for up to three days.
