  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Mix the melted butter, milk, eggs, and vanilla in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips gently.
  6. Divide the batter among the muffin cups, filling them about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool slightly before serving.

Notes

For extra flavor, consider browning the butter instead of just melting it. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
