A creamy and dreamy cheesecake with a nutty almond crust and aromatic Amaretto liqueur.

  • 1 1/2 cups almond flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup Amaretto liqueur
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • Toasted almonds for garnish

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine almond flour, melted butter, sugar, and salt in a mixing bowl. Press the mixture into the bottom of the springform pan.
  3. Bake the crust for 10-12 minutes until lightly golden. Remove and let cool.
  4. Beat the cream cheese until smooth. Gradually add sugar, continuing to beat until fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in Amaretto, vanilla extract, and heavy cream until smooth.
  7. Pour the cheesecake filling over the cooled crust, spreading evenly.
  8. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  9. Cool in the oven with the door cracked for 1 hour.
  10. Refrigerate for at least 4 hours or overnight.
  11. Top with toasted almonds before serving.

Notes

For best results, ensure cream cheese is at room temperature. You can substitute Amaretto with other liqueurs.
