A delightful and elegant cake infused with the rich flavors of almond flour and amaretto liqueur, perfect for any occasion.

  • 1 1/2 cups almond flour
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1/2 cup amaretto liqueur
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk, amaretto, vanilla extract, and almond extract.
  5. Combine the almond flour, all-purpose flour, baking powder, and salt in another bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Pour the batter evenly into the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Whip cream with amaretto until soft peaks form for the filling.
  11. Frost with icing of your choice and serve.

Notes

Make sure the butter is softened, not melted, for the best texture when creaming. Store leftover cake in an airtight container for up to 3 days or freeze individual slices for up to a month.
